With spring climates set to sizzle this season (we hope), we’re sharing this equally hot Simple Steak Fajita recipe for you to sink your teeth into this season.
In the past, we’ve shared many fond memories around the kitchen table with our trusted Old El Paso taco kits, filling as many tortillas our stomachs would allow for – trying to avoid a river of salsa from dribbling down our freshly washed school shirts in the process.
Despite the convenience (and fun) of these classic ready-made packs, it’s good culinary practice to explore other home-cooked recipes – which is why with the help of Waitrose, we’re bringing you these Waitrose Simple Steak Fajitas to add to your repertoire.
With mouth-watering, juicy British steak, fresh floury tortilla wraps and creamy avocado salsa – this is one to savour (if you can manage it). You can add in some grated cheese if you like, but we think it’s good enough just as it is!
Whichever way you prefer it, send us your pictures on social using #BritishHappiness – enjoy!
Preparation time:15 minutes
Cooking time:30 minutes
Total time:45 minutes
340g pack essential Waitrose British Beef Frying Steak, cut into 2cm-wide strips
2 cloves garlic, finely chopped
1 tsp dried oregano
Juice of 2 limes
2 tbsp olive oil
2 ripe avocados
1 Waitrose Classic Vine Tomato, finely chopped
1 red chilli, seeded and diced
2 tbsp chopped chives
2 Waitrose Red Romano Peppers, seeded and cut into 10cm-long strips
4 flour tortillas
Soured cream and grated Gruyère to serve
Place the steak, garlic, oregano, half the lime juice and 1 tbsp olive oil in a large bowl and toss well together. Leave to marinate for 10 minutes.
Meanwhile, skin, stone and finely dice the avocados. Mix with the remaining lime juice and olive oil, the tomato, chilli and chives, then set aside.
Heat a large frying pan and stir-fry the steak and peppers over a high heat for 5 minutes until the peppers are tender and the steak is nicely browned. Tip into a large serving bowl.
Wipe out the pan with kitchen paper and briefly warm the tortillas. Plate the steak and peppers, salsa and tortillas on separate serving dishes. Serve with the soured cream and grated cheese, and invite everyone to fill and roll their own tortillas.
